Lentil Stew

So I wanted to make split pea soup yesterday on my day off, but didn’t have any peas. I made lentil stew instead on the same formula I use for split pea. Stew because I cooked waaayyy too many lentils. I did scoop some out for burgers later.

Lentils (don’t know how much… maybe 2/3 cup dry???)

water

2 carrots, cut in coins

2 potatoes, cut in 1” cubes

1 red onion, cut in little bits

1 clove chopped garlic

1 T nutritional yeast

1 t cumin

1 t curry powder

1/4 c olive oil

salt and pepper

Simmer the lentils until they are soft. Like you could eat them, but they are not delightfully squishy yet.

Put in everything else.

Simmer for about 20 more minutes.

Delicious.
